Simple Summer Spaghetti

This is one my favourite things to eat (actually at any time of year) and I adore its simplicity and summery feel.  The garlic and parsley should be very fresh, and hopefully not the supermarket variety.  Try using wholemeal pasta for a little more nutrition.

250g dried spaghetti
1 large clove garlic, crushed
6 heaped tbsp very finely chopped parsley (about 1 bunch)
1/2 tsp chilli flakes (optional)
3 tbsp finely grated parmesan
3 tbsp extra virgin olive oil
salt & pepper

Cook the spaghetti until al dente, drain but do not rinse.  Return spaghetti to hot pan and add all other ingredients and stir well for 2 minutes.  Season to taste and serve immediately (with a chilled glass of chablis).

Serves 2.
