Ricotta Toast with Orange Blossom Nectarine
| This makes a
nice healthy brunch, dessert, or even afternoon tea.
Try and find true orange blossom water, and not an essence
with artificial flavouring. Make sure the nectarines
or peaches are ripe, or use plums if they are in season.
Don't assemble the toasts too long before serving as they
will go soggy. You could also use the same filling
inside a thin crepe. |

6 small, thin slices of
sourdough, lightly toasted
3 ripe nectarines, stone removed and cut into small dice
2 tbsp orange juice
1 teaspoon orange blossom water
6 teaspoons ricotta
1 teaspoon orange blossom honey
1 tbsp pistachios, chopped
Combine nectarine with orange
juice and orange blossom water. Mix ricotta with honey and
spread onto toast. Top with nectarine mixture and sprinkle
with pistachios to serve.
Makes 6 toasts.
