Chilli Oil

It struck me the other day in the supermarket how many flavoured oils are for sale.  It is very easy to make your own, and to me, chilli oil is indispensable.  It's perfect drizzled over a pizza or pasta, soup or some fresh crusty bread.  It will keep forever too, as long as the pieces of chilli are submerged in oil.

100ml olive oil
100ml extra virgin olive oil
1 tsp chilli flakes
2 red chillies, roughly chopped

Combine all ingredients in an airtight container and leave for at least one week fo flavours to infuse.

Also try making rosemary oil and lemon oil (with unwaxed lemon rind).

Makes 200ml.
