Banana Jam

I hope no-one throws away over-ripe bananas, but if you're sick of making banana bread, try making this jam instead.  Did you know that bananas freeze fine when they are going to be cooked?  you can put your black bananas in the freezer until you have time to make jam.

3 very ripe bananas, about 400g
50ml lime juice + 1 tsp lime zest
250g preserving/jam sugar
1 teaspoon ground coriander
1 teaspoon ground cardamom
1/2 teaspoon ground cassia (or cinnamon)

Mash the bananas in a saucepan and add all the other ingredients.  Bring to the boil, then simmer over med heat, stirring, for about 15-20 minutes.  The sugar needs to be dissolved and the consistency to have thickened considerably.  Allow to cool and store in sterilised jars.
