Avocado, Sesame & Sumac Quinoa in Baby Gem Leaves

 

This is a nice healthy dish that can be eaten for lunch or a snack, or served as a canape.  The quinoa could also be put into pita bread or simply eaten on it's own.  Quinoa is an amazingly nutritious Aztec grain that is in most supermarkets or health food shops.

 

300g quinoa, cooked and drained
1 avocado, diced into 1cm pieces
4 spring onions, finely sliced
2 teaspoons sesame oil
2 teaspoons soy sauce
4 tablespoons lemon juice
2 tablespoons extra virgin olive oil
2 heads of baby gem lettuce (16 leaves), washed and drained
sesame seeds, to serve
sumac, to serve

Combine avocado, spring onions, sesame oil, soy, lemon juice and oil and season to taste.  Spoon into lettuce leaves and sprinkle with sesame seeds and sumac.

Serves 4-8.
