This class focuses on the techniques of cooking seafood.  I always think it's a shame to spend so much money on wonderful produce, only to lose confidence when you get into the kitchen.  We also cook some lovely dishes from around the World in this class.

Example Recipes:

  • salt & pepper squid 

  • snapper ceviche with chilli and lime

  • mussels in lemongrass broth 

  • harissa grilled butterflied mackarel

  • whole baked sea bass with ginger and shallots 

  • whiting fillets in parmesan crust with fennel remoulade

  • chargrilled tuna, eggplant and zucchini with sicilian dressing
